Herb and Bacon Potato Casserole

  • 6 potatoes, medium
  • 1 cup Nutrioli® pure soy edible oil
  • 2 cloves garlic
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh oregano
  • 1 teaspoon fresh marjoram leaf
  • 1 tablespoon lemon zest
  • salt and pepper
  • 20 slices bacon, fried
  • 3 tablespoons Parmesan cheese, grated
  • fresh thyme, for decoration

  • Preheat the oven to 190°C.
  • Place the potatoes in a bowl and add Nutrioli® Pure Soybean Oil, garlic, thyme, oregano, marjoram, lemon zest, season with salt and pepper, and mix very well. Marinate for 30 minutes.
  • Arrange the potatoes in an oven-safe dish, alternating with the fried bacon, season with salt and pepper. Cover with aluminum foil and bake for 20 minutes. Remove from the oven, sprinkle with grated Parmesan, and bake again for 7 to 10 more minutes.
  • Serve hot and garnish with fresh thyme.
