  • 5 potatoes, peeled and cubed, for mashed potatoes

  • 1 tablespoon white pepper
  • 3 tablespoons butter
  • 2 cups deli ham, cut into cubes
  • 1/4 cups chives, finely chopped
  • cherry tomato, halved, for decoration
  • parsley, finely chopped, for decoration

  • Preheat the oven to 180 °C
  • Cook the potatoes in boiling salted water until very soft, drain, and set aside.
  • Place the cooked potatoes, egg, salt, white pepper, butter in the processor, and blend until smooth. Mix with the ham and green onion.
  • Place the mixture in a piping bag, and pipe the mash into a previously greased cupcake mold. Bake for 30 minutes or until puffed and the egg is cooked.
  • Serve the cakes as a side dish, garnished with cherry tomatoes and chopped parsley.
