McDonald's Style Hash Brown

  • 4 potatoes, large, peeled, and grated
  • ice cubes

  • 2 tablespoons corn syrup
  • 1 tablespoon sugar
  • 3 tablespoons cornstarch, sifted
  • 1/3 cups rice flour, sifted
  • 1/2 cups wheat flour, sifted
  • salt
  • 1 teaspoon onion powder
  • 1 egg
  • vegetable oil, for frying
  • BBQ sauce, for serving

  • Place the grated potatoes in a bowl with ice and water, then let sit for 1 hour and drain. Heat the water with the corn syrup and sugar in a pot over medium heat, when the water boils add the potatoes and cook for 3 to 4 minutes, just to soften the potatoes, then remove from heat and drain on a dry cotton cloth. Squeeze the potatoes very well using the same cloth; the potatoes should be dry. You can also place them on a tray to finish drying.
  • Once you have removed the moisture from the potatoes, place the grated potatoes in a bowl along with the cornstarch, rice flour, wheat flour, and enough salt, and mix. Add the onion powder and the egg, then finish mixing until a compact dough forms. Take a portion of the mixture the size of a ping-pong ball and shape it into an oval with clean hands. Repeat until all the mixture is used and set aside.
  • In a small pot, pour in the oil and heat over medium heat, fry the potatoes for 6 minutes on each side or until golden and cooked inside. Drain on paper towels. Set aside.
  • Serve the hash browns with BBQ sauce.
