You have a gathering and don’t know what appetizer to prepare; this recipe for melted cheese with jalapeño, potatoes, and bacon will be your salvation. It is easy to prepare and full of flavor. They will surely love it.
2 cups yukon gold potato, cooked, peeled, and diced
1 cup corn kernel
1 cup onion, sliced
2 Jalapeño chiles, seedless and sliced
1 clove garlic, finely chopped
1 cup Mozzarella cheese
8 cups tortilla chips

Preheat the oven to 350°F (180°C).
Cook, stirring, the bacon in a large skillet over medium heat until crispy. Remove it from the skillet with a slotted spoon; drain it on paper towels. Discard the fat from the skillet, except for 2 tbsp. Add the potatoes, corn, onion, peppers, and garlic to the remaining fat in the skillet; cook this for 8 to 10 minutes or until completely heated through; remember to stir occasionally.
Reserve 2 tbsp. of bacon for later use. Incorporate the remaining bacon into the potato mixture; place the entire mixture in a pie dish. Top it with cheese.
Bake for 12 to 15 minutes or until completely heated through. Top it with the bacon you reserved. Serve it with tortilla chips.
