Place the previously washed potatoes in a pot over medium heat, using a brush to remove any dirt. Leave them until they feel extremely soft when pierced with a fork.
Remove the potatoes from the water, allow them to cool for 10 minutes, and peel. Mash them with a fork to make a puree.
Place the butter in a pan over medium heat.
Add the potato, cheese, and season with salt and pepper.
Cook until the cheese melts, mixing a couple of times.
