Potato Bacon Casserole

Enjoy this practical side dish to accompany any dish of the season. This recipe is super easy and will be a hit.

  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 6 potatoes, large
  • 1/2 onions
  • 1 pinch salt
  • 1 pinch pepper
  • 250 grams bacon
  • 1 bunch fresh thyme

  • Oven Preheated to 180° C
  • Melt the butter in the microwave, pour in the olive oil, and mix.
  • Grease the bottom and sides of a baking dish with a bit of the previous mixture.
  • Peel the potatoes and slice them as thin as possible, do the same with the onion.
  • Arrange the potatoes and onions alternately in the baking dish vertically, forming a circle and then a smaller circle inside that one, and so on until it is filled. Brush with the oil and butter mixture and season with salt and pepper to taste.
  • Bake uncovered for 1 hour and 25 minutes. If you feel it is drying out, you can add a little more butter.
  • Cut the bacon into small cubes and place it in a skillet until it is slightly fried. Place it on a plate lined with paper towels.
  • Remove the potatoes from the oven and distribute the bacon and fresh thyme over them.
  • Bake again for approximately 30 minutes. Season with salt and pepper again and serve.
