Melt the butter in the microwave, pour in the olive oil, and mix.
Grease the bottom and sides of a baking dish with a bit of the previous mixture.
Peel the potatoes and slice them as thin as possible, do the same with the onion.
Arrange the potatoes and onions alternately in the baking dish vertically, forming a circle and then a smaller circle inside that one, and so on until it is filled. Brush with the oil and butter mixture and season with salt and pepper to taste.
Bake uncovered for 1 hour and 25 minutes. If you feel it is drying out, you can add a little more butter.
Cut the bacon into small cubes and place it in a skillet until it is slightly fried. Place it on a plate lined with paper towels.
Remove the potatoes from the oven and distribute the bacon and fresh thyme over them.
Bake again for approximately 30 minutes. Season with salt and pepper again and serve.
