1 red apple
1 celery
30 grams walnuts, in halves
20 grams raisins
1/2 limes
1 tablespoon mayonnaise
1/3 teaspoons mustard
1 pinch salt
1 pinch pepper

Boil the potatoes with skin until they are soft but still firm.
While the potatoes are boiling, cut each half of the walnut into 4 equal parts, shred the celery, cut lengthwise and then dice.
Dice the apple with skin into small cubes, add lemon juice and cover with plastic to prevent browning.
Remove the potatoes and strain them, wait for them to cool.
In a bowl, mix the tablespoon of mayonnaise, sugar, 1/3 teaspoon of mustard, and a pinch of salt. Stir well.
Add the celery, apple, walnuts, and raisins to the mayonnaise mixture, and stir very well.
Lightly dust the cutting board with pepper.
Peel the cooled potatoes, cut into cubes roughly the size of a die on the board with the pepper.
Add the diced potatoes to the rest of the salad and gently fold to avoid mashing the potatoes.
Refrigerate and serve.
