Potato Salad

A very good option to accompany any dish. A healthy salad that combines freshness and sweetness.

  • 3 potatoes
  • 1 red apple
  • 1 celery
  • 30 grams walnuts, in halves
  • 20 grams raisins
  • 1/2 limes
  • 1 tablespoon mayonnaise
  • 1/3 teaspoons mustard
  • 1 pinch salt
  • 1 pinch pepper

  • Boil the potatoes with skin until they are soft but still firm.
  • While the potatoes are boiling, cut each half of the walnut into 4 equal parts, shred the celery, cut lengthwise and then dice.
  • Dice the apple with skin into small cubes, add lemon juice and cover with plastic to prevent browning.
  • Remove the potatoes and strain them, wait for them to cool.
  • In a bowl, mix the tablespoon of mayonnaise, sugar, 1/3 teaspoon of mustard, and a pinch of salt. Stir well.
  • Add the celery, apple, walnuts, and raisins to the mayonnaise mixture, and stir very well.
  • Lightly dust the cutting board with pepper.
  • Peel the cooled potatoes, cut into cubes roughly the size of a die on the board with the pepper.
  • Add the diced potatoes to the rest of the salad and gently fold to avoid mashing the potatoes.
  • Refrigerate and serve.
