8 slices bacon, finely chopped
1 bunch chives
500 grams cheddar cheese
2 potatoes
1 cup sour cream
1/2 red onions, sliced
1 carrot , julienned
1 zucchini , julienned
salt , to taste
pepper, to taste
pimentones, to taste

Spray a baking dish with cooking spray and spray the potatoes. Put them in the oven at 250° C for 1 hour.
Remove the potatoes and let them cool. Then cut them into 4 lengthwise and remove as much of the flesh as possible.
Mix the carrot, zucchini, and onion with salt, pepper, and paprika.
In a skillet with a little oil, cook the vegetables until they are crispy.
Spray a baking tray with vegetable oil and place the potatoes also sprayed. Bake them until crispy.
Grate the cheese, brown the bacon in small pieces, and chop the green onion.
Place the vegetables on top of each potato, then add cheese, bacon, and finally green onion, and put them in the oven until gratinated.
