Shrimp Stuffed Potatoes

Potatoes are always the perfect accompaniment for your dishes, and these delicious potatoes will be no exception with their creamy filling of shrimp and cream cheese and a spicy chipotle flavor, gratin with manchego cheese. They are irresistible!

  • 6 potatoes
  • 1 tablespoon butter
  • 3 tablespoons red onion
  • 1 tablespoon garlic, finely chopped
  • 2 cups shrimp, clean and peeled
  • 1/2 cups sour cream
  • 190 grams cream cheese
  • 2 tablespoons chipotle chile, ground
  • salt and pepper
  • 1 tablespoon parsley, finely chopped
  • 1 cup Manchego cheese, for gratin

  • Preheat the oven to 180°C.
  • Wrap the potatoes in aluminum foil and bake for 40 min.
  • With the help of a spoon, hollow out the potatoes and set aside.
  • For the filling, heat the butter in a pan over low heat and sauté the onion, add the garlic, cook the shrimp for 2 min, add the sour cream, cream cheese, chipotle pepper, season with salt and pepper, add the parsley and remove from heat.
  • Fill the potatoes with shrimp, add manchego cheese and gratin for 10 minutes in the oven.
  • Enjoy them hot.
