Stuffed Potatoes with Choriqueso

  • 6 russet potatoes, cooked
  • 1 1/2 cups whipping cream, for the filling
  • 3/4 cups cheddar cheese, for the filling
  • 3/4 cups Manchego cheese, for the filling
  • 3/4 cups asadero cheese, for the filling
  • 1 cup chorizo, fried, for the filling
  • 1 cup baked potato stuffing, for the filling
  • parsley, finely chopped
  • salad, to accompany

  • Remove part of the potato flesh with the help of a spoon. Set aside.
  • Heat the heavy cream, cheddar cheese, manchego cheese, asadero cheese, chorizo, and the potato filling in a pot. Cook until the cheese melts and set aside.
  • Stuff the potatoes with the previous preparation, place them on a large cast iron skillet, cover the potatoes with the remaining cheese, and bake at 180 °C for 15 minutes.
  • Serve the stuffed choriqueso potatoes hot, garnish with parsley, and accompany with salad.
