  • 1 bag Super Wedges Mccain®
  • 4 guajillo chiles, seedless and deveined
  • 4 chipotle chiles, seedless and deveined
  • 4 cascabel chiles, seedless and deveined
  • 1/4 teaspoons garlic powder
  • 1/2 teaspoons onion powder
  • 1 teaspoon lime zest
  • vegetable oil
  • 1/4 cups mayonnaise
  • 1/4 cups jocoque
  • 1/4 cups lime juice
  • 1 cup fresh cilantro
  • 1 tablespoon salt
  • 1 tablespoon pepper

  • Heat a pot with oil over high heat, wait for the oil to be boiling, and fry the McCain® Super Wedges directly from frozen until crispy and golden, approximately 3 ½ to 4 minutes. Drain on absorbent paper and set aside.
  • Roast the chiles on a skillet over low heat until dry. Blend them until you get a fine powder and mix with garlic powder, onion powder, and lime zest. Sprinkle this mixture over the potatoes and mix very well.
  • For the dressing, blend the mayonnaise with the jocoque, lime juice, cilantro, salt, and pepper.
