  • 5 potatoes
  • 1 cup flour
  • 1 tablespoon cornstarch
  • vegetable oil, for frying
  • 4 tablespoons butter
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 4 tablespoons flour
  • 2 cups cow's milk
  • 1/2 cups whipping cream
  • 3/4 cups Parmesan cheese
  • 1 tablespoon salt
  • 1/2 tablespoons pepper
  • 1/2 tablespoons nutmeg
  • Parmesan cheese, grated, for garnish
  • parsley, finely chopped, for garnish

  • On a cutting board, cut the potatoes into wedges and set aside.
  • In a bowl, mix the potatoes with the flour and cornstarch until they are completely coated.
  • In a pot with hot oil, fry the potatoes until cooked on the inside, drain on paper towels.
  • For the Alfredo sauce, in a pot, melt the butter and cook the onion, garlic, then add the flour all at once and stir until a light golden paste forms, add the milk and cook until slightly thickened, pour in the whipping cream, add the cheese, let it melt and season with salt, pepper, and nutmeg.
  • Place the fries on a plate and drizzle with hot Alfredo sauce, sprinkle with Parmesan cheese, and garnish with chopped parsley.
