Provençal Tomatoes

These baked tomatoes are typical of Provence and are delicious.

  • 4 tomatoes, firm
  • 1 1/2 teaspoons garlic
  • 2 tablespoons shallot, finely chopped
  • 4 tablespoons basil, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1/4 cups olive oil
  • 1/2 cups breadcrumbs

  • Cut the tomatoes in half through the widest part. Using a small spoon, remove some of the seeds. Season the tomato halves with salt and place them cut side down on a rack to drain for 20 minutes.
  • We will need a baking dish where we can place the 8 halves of the tomatoes. In a small bowl, combine the garlic, 1/4 teaspoon of salt, basil, 1/2 teaspoon of pepper, olive oil, and breadcrumbs for the filling.
  • Season the inside of the tomatoes with pepper and fill them with 1 or 2 tablespoons of the mixture. Drizzle with a few drops of olive oil and arrange them in the baking dish. Sprinkle with thyme.
  • Place in the oven at 400ºF for 10 minutes, checking that they do not lose their shape. They should be slightly golden. Remove from the oven and let them cool a bit before serving.
