Cecilia Style Rice

  • 1 cup white rice
  • 2 cups water, boiling
  • 5 tablespoons almonds, sliced
  • 5 tablespoons nut , chopped
  • 1/4 cups raisins
  • 1/4 cups dried cranberries
  • 1 Poblano chile, roasted, deveined, in strips
  • 1 bell pepper
  • 1/2 onions, medium, in wedges
  • 1 tablespoon paprika, powder
  • 2 tablespoons curry powder
  • 4 tablespoons oil
  • salt , to taste

  • Wash the rice and cook it in the 2 cups of boiling water.
  • Meanwhile, in a skillet with the 4 tablespoons of oil, lightly toast the almonds and walnuts, set aside, and sauté the onion with the poblano and bell peppers.
  • Add the rice along with the rest of the ingredients, stirring gently, and let simmer for about 5 minutes. Let it rest and serve. Ready to enjoy.
