Cilantro Rice Recipe

  • 1/4 cups water, for the cilantro sauce
  • 1 cup cilantro, for the cilantro sauce
  • 1/2 onions, for the cilantro sauce
  • 1 clove garlic, for the cilantro sauce
  • salt, for the cilantro sauce
  • pepper, for the cilantro sauce
  • 1 tablespoon vegetable oil, for the rice
  • 1/4 cups onion, finely chopped, for the rice
  • 1 cup rice, soaked in hot water
  • 1/2 cups yellow corn, for the rice
  • 2 cups chicken broth, for the rice
  • cilantro, for garnish
  • 1 Del Valle Frut® Citrus, for serving

  • Blend the water, cilantro, onion, garlic, and season with salt and pepper until you obtain a homogeneous mixture; set aside.
  • In a saucepan over medium heat, heat the oil and add the onion (this will help give the rice a richer flavor when cooked); once the onion is slightly golden, add the rice; cook for 3 minutes, stirring constantly until the rice turns golden.
  • Pour the cilantro sauce, mix a little to integrate flavors, and let it cook on low heat for 5 minutes.
  • Pour in the chicken broth, mix very well, and cook for 5 minutes. Incorporate the corn kernels and cook until the broth has been absorbed. You will know the rice is ready when it is fluffy and tender.
  • Serve on a large plate to eat with family and garnish with cilantro leaves; don't forget to enjoy this delicious cilantro rice with a glass of Del Valle Frut® Cítricos.
