Red Rice with Vegetables

  • 4 tomatoes, ripe
  • 2 cloves garlic
  • 1/4 onions, cut into pieces
  • 2 cups broth, chicken or vegetable
  • 1 1/2 cups rice, soaked in hot water
  • vegetable oil
  • 1/2 cups carrot, cut into small cubes
  • 1/2 cups potato, cut into small cubes
  • 1/2 cups peas
  • 2 serrano chiles, whole
  • salt
  • fresh cilantro, for garnishing

  • Blend the tomato with the garlic, onion, and a little broth, set aside.
  • Heat a small pot over medium heat with the oil, fry the rice until golden, for about 5 minutes. Add the blender preparation and cook for a few minutes until the rice absorbs the mixture.
  • Add the rest of the broth, the carrot, the potato, the peas, the chiles, and the salt. Cover the pot and cook until it starts to boil, then lower the heat to medium and cook for 25 to 30 minutes.
  • Turn off the heat and let it rest for 10 minutes so it finishes cooking with its own heat, stir before serving to fluff it, serve, and enjoy.
