Stuffed Peppers with Rice

  • 1 envelope Knorr® instant white rice
  • 1 3/4 cups water
  • 1 tablespoon vegetable oil
  • 6 bell pepper, medium-sized with tops cut off, seedless
  • 1 tablespoon olive oil
  • 1/2 onions, finely chopped
  • 1 carrot, peeled and diced
  • 1 sprig celery, large chopped
  • 2 cloves garlic, finely chopped
  • 230 grams ground meat
  • 1 teaspoon fresh cilantro, finely chopped
  • 1 teaspoon pepper
  • 200 grams tomato purée
  • red salsa

  • Bring 4 cups of water to a boil in a large pot. Once boiling, place the peppers (cleaned and seedless) in the water and cook until soft (about 6 - 7 minutes).
  • Remove the peppers from the water and dry with paper towels.
  • For the filling: prepare the Knorr® Instant Rice. In a saucepan, place the water, oil, and the contents of the Knorr® Instant Rice package. Mix and heat over high heat until boiling. Once boiling, cover the saucepan and cook on low heat for approximately 10 minutes. Turn off and let rest for 5 minutes with the saucepan covered.
  • Put the olive oil in a large skillet over medium-high heat and sauté the onion until it is translucent.
  • Add the carrot, celery, and garlic. Continue cooking until all the vegetables are soft, about 4 minutes.
  • Add the ground meat, cilantro, pepper, and cook, breaking apart with a wooden spoon for 7 minutes.
  • Add the tomatoes with the Knorr® Instant Rice and cook for 5 minutes.
  • Stuff the peppers with the meat and Knorr® Instant Rice mixture.
  • Serve with red sauce and garnish with a little cilantro.
