Pinto Beans with Rice

This recipe for pinto beans with rice, which seems so familiar and simple to us, would not be known today if it weren't for the cultural exchange and food products that occurred after the discovery of America. Along with beans, many other products entered Europe through Spain, enriching our cuisine, such as corn, potatoes, tomatoes, strawberries, peanuts, and countless other products (pepper, pumpkin, pineapple, avocado, cherimoya, cocoa).

  • 300 grams bean, pinto
  • 150 grams rice, bomba
  • 1 clove garlic
  • 1 carrot
  • 1 onion
  • 1 leek
  • 1 tablespoon flour
  • 1 teaspoon pimentón, sweet
  • 1 pinch pimentón, spicy
  • 3 tablespoons olive oil
  • 2 leaves bay
  • 3 grams salt

  • Soak the beans in plenty of water with a teaspoon of salt the night before.
  • Using a pressure cooker, add large pieces of carrot and leek, along with the pinto beans, bay leaves, and salt. Add cold water to cover all the ingredients well.
  • Cook in the pressure cooker for about 20 minutes once steam starts to come out of the top nozzle. After the time has passed, remove from heat and let it depressurize (the total time is 1 hour).
  • In a pot, add 1 tablespoon of oil and the garlic clove. Brown the garlic clove slightly, then add the rice and double the amount of water compared to the rice. Boil on high heat for 10-15 minutes. Finally, let it rest for 5 minutes.
  • Once the beans are cooked, remove the carrot and leek from the broth, as they have left all the flavor in the broth.
  • In a pan, heat the oil, add the finely chopped onion, and let it sauté on low heat until it becomes transparent (5 min). Next, add the flour, sauté, then add the paprika, sauté for a few seconds (be careful not to burn the paprika), and add some of the bean broth to bind the mixture.
  • Incorporate the mixture from the pan into the pot with the beans and let it boil for 15 minutes. Serve the pinto beans with rice.
