1 cup chicken broth
3/4 cups water
1 cup long grain rice
1 pinch salt
1/2 cups coconut milk, (natural unsweetened)
1/2 tablespoons lemon zest
1 pinch ground pepper

In a large pot, heat the chicken broth and water until it begins to boil.
Add the rice and salt and cook until it boils.
Cover the pot, lower the heat, and cook until the rice is cooked and has absorbed all the liquid.
With a fork, stir the rice a little and add the coconut milk, lemon, and pepper. Mix well.
