Coconut Rice

Coconut rice is a very aromatic rice that pairs perfectly with seafood or chicken. This recipe is very rich and very easy.

  • 1 cup chicken broth
  • 3/4 cups water
  • 1 cup long grain rice
  • 1 pinch salt
  • 1/2 cups coconut milk, (natural unsweetened)
  • 1/2 tablespoons lemon zest
  • 1 pinch ground pepper

  • In a large pot, heat the chicken broth and water until it begins to boil.
  • Add the rice and salt and cook until it boils.
  • Cover the pot, lower the heat, and cook until the rice is cooked and has absorbed all the liquid.
  • With a fork, stir the rice a little and add the coconut milk, lemon, and pepper. Mix well.
