Grandma's Rice with Milk

In Mexico, there are different versions to prepare rice with milk, some soupy and others very creamy. It is almost always considered a dessert.

  • 220 grams sweet rice
  • 1/2 liters water
  • 1/8 teaspoons lactose-free milk
  • 750 milliliters whole milk
  • 1 cinnamon stick, of 5 cm
  • 2 strips orange peels, of 5 cm
  • 1 can condensed milk, of 397 gr
  • 1/4 cups sugar
  • 1 stick butter, of 90 gr
  • 1/2 cups whipping cream
  • cinnamon powder, optional

  • Place the rice with 2 cups of water and sugar in the Express Pressure Cooker® over high heat.
  • Close the Express Pressure Cooker® and put the pressure regulator on, place it on the stove over high flame for about 25 minutes or until a constant steam comes out, lower the flame to medium and cook for 10 minutes.
  • Remove the Express Pressure Cooker® from the heat, let it cool, remove the pressure regulator, open the Express Pressure Cooker® and voila! Drain and set aside.
  • Meanwhile, in another pot over medium heat, place the milk with the cinnamon stick and the strips of orange. Let it slightly boil for 5 minutes. Using a slotted spoon, remove and discard the cinnamon and the strips of orange.
  • Integrate the condensed milk, sugar, butter, and cream for whipping, and constantly mix with a wooden spoon to prevent sticking to the bottom of the pot.
  • Let it boil for a few minutes and remove from the heat. Add the cooked rice and mix until fully integrated. Transfer the rice to a baking dish and let it cool.
  • Serve in small glasses garnished with cinnamon to taste.
