Vanilla Rice Pudding

  • 1 orange, large
  • 1 lime
  • 1 liter cow's milk
  • 250 grams rice
  • 100 grams sugar
  • 1 vanilla bean, cut open lengthwise
  • 1 pinch salt
  • 125 milliliters whipped cream

  • Finely grate the orange and lemon zest. Set them aside.
  • Rinse a heavy-bottomed saucepan with water and do not dry it.
  • Put the milk and rice in the saucepan, bring it to a boil over medium heat. Lower the heat and add the sugar and vanilla, along with the orange zest, lemon zest, and salt.
  • Mix it well. Let it continue to simmer, stirring frequently, until it is thick and creamy and the rice grains are well cooked. It may take about 30 minutes.
  • Remove the vanilla pod and stir in the whipped cream.
  • Serve the rice pudding immediately sprinkled with a little brown sugar if desired or completely cold.
  • Cover it and refrigerate until ready to serve.
