Rice with Almonds and Portobello

  • 2 tablespoons unsalted butter
  • 1 cup almonds, slices
  • 1 envelope Knorr® instant white rice
  • 1 3/4 cups water
  • 1 tablespoon oil
  • 1/4 cups onion, finely chopped
  • 80 grams portobello mushroom, in slices
  • 2 tablespoons parsley , chopped
  • salt , and pepper to taste

  • Preheat the oven to 175ºC.
  • In a saucepan, place the water, oil, and the contents of the Knorr® Instant Rice packet. Mix and heat on high until it boils. Cover the saucepan and cook on low flame for approximately 10 minutes. Turn off the heat and let it rest for 5 minutes with the saucepan covered.
  • Heat the butter in a skillet over medium heat. Add the onion, portobello mushrooms, and cover. Heat until softened, about 15 minutes.
  • Add Knorr® Instant Rice and mix.
  • Place the almonds on a baking tray and put in the oven for 5 minutes, watching that they do not burn.
  • Once the rice is ready, add the almonds, parsley, season with salt and pepper to taste, and mix.
  • Serve.
