Risotto with mushrooms, portobello, and fungi

  • 740 grams chicken broth
  • 250 grams white wine
  • 2 tablespoons olive oil
  • 1/2 cups onion, finely chopped
  • 2 teaspoons garlic, finely chopped
  • 250 grams Arborio rice
  • 1/2 cups button mushrooms
  • 1/2 cups portobello mushroom
  • 1/4 cups oyster mushrooms
  • salt

  • 1/4 cups Parmesan cheese
  • 1/4 cups parsley, finely chopped, for garnish
  • Parmesan cheese, in shavings, for garnish

  • In a bowl, mix the chicken broth and white wine. Set aside.
  • On the Bamboo Board and with the Chef's Knife, cut the mushrooms into small cubes, as well as the portobello and other fungi. Set aside.
  • In the 10” Deluxe Easy Release skillet, heat the olive oil over medium heat and cook the onion and garlic for 4 minutes. When the onion and garlic change color, add the mushrooms and cook for 4 more minutes.
  • When the mushrooms are slightly browned, add the arborio rice to the skillet and cook for 5 minutes, until it changes slightly in color; then add ½ cup of the chicken broth and wine mixture. Stir with a spoon and cook over medium-low heat, stirring occasionally, until all the liquid evaporates. When the liquid evaporates, add another half cup of the broth and wine mixture. Repeat this until all the liquid is used up, stirring continuously.
  • When the liquid is finished, add the parmesan cheese, mix, and remove from heat.
  • Serve the risotto in a bowl; garnish with parsley and a bit of parmesan cheese.
