Sweet and Sour Sausage and Vegetable Rice Bowl

  • 2 tablespoons olive oil, for the rice
  • 1/4 cups onion, finely chopped, for the rice
  • 1 1/2 cups white rice, washed, soaked in warm water and drained
  • 1/2 cups carrot, in medium cubes, for the rice
  • 1/4 cups peas, for the rice
  • 1/2 cups pumpkin, in small cubes, for the rice
  • 3 cups chicken broth, for the rice
  • 1 cup broccoli, cooked, in small pieces, for the rice
  • 1/4 cups cilantro, leaves, for the rice

  • 2 tablespoons sesame oil, for the sausage
  • 1/2 cups green onion, with tail, sliced, for the sausage
  • 1 package Lala® Plenia® Turkey Hot Dog Sausage, 250 g
  • 1/2 cups green bell pepper, in medium squares, for the sausage
  • 1 cup yellow bell pepper, in medium squares, for the sausage
  • 1 cup red bell pepper, in strips, for the sausage
  • 1 cup pineapple, in triangle, for the sausage
  • 1 1/2 cups orange juice, for the sausage
  • 2 tablespoons ketchup, for the sausage
  • 1/4 cups rice vinegar, for the sausage
  • 2 tablespoons soy sauce, for the sausage
  • 3 tablespoons honey, for the sausage
  • 1 teaspoon ginger powder, for the sausage

  • sesame seeds, candied, for garnish

Low
  • For the rice, in a pot with hot olive oil, sauté the onion while stirring until it begins to turn transparent. Add the previously drained rice and mix. Cook until the grains begin to look shiny, then add the carrot, peas, and zucchini, and incorporate.
  • Pour in the chicken broth, add the broccoli, cilantro, season with salt and pepper; cook on low heat until the liquid starts to boil. Cover and cook for 15 minutes, remember that the heat should be low; otherwise, the rice might burn, and you shouldn’t stir it to avoid crushing the grains. Set aside.
  • On a cutting board, slice the Lala® Plenia® turkey hot dog sausage into half-centimeter thick slices and set aside.
  • For the sweet and sour sausage, in a large skillet with hot sesame oil, sauté the onion while stirring. Add Lala® Plenia® turkey hot dog sausage, green bell pepper, yellow bell pepper, red bell pepper, and pineapple. Mix and cook until browned.
  • Pour in the orange juice, ketchup, rice vinegar, soy sauce, honey, ground ginger, and enough pepper. Cook for 6 more minutes on low heat or until the sauce starts to thicken.
  • In a deep bowl, serve the rice with vegetables, add the sweet and sour sausage, and garnish with candied sesame seeds.
