Roasted Sweet Potatoes

  • 2 yellow sweet potatoes
  • 2 white sweet potatoes
  • 2 purple sweet potatoes
  • 1/4 cups olive oil
  • 2 tablespoons salt
  • 2 tablespoons pepper
  • 1/4 cups orange juice

  • Preheat the oven to 220 degrees Celsius.
  • Cut the sweet potatoes into thick pieces like those in the photo.
  • In a large, deep bowl, mix the olive oil, orange juice, salt, and pepper.

  • Place on a baking tray and bake for 45 minutes or until the sweet potatoes are tender and cooked through. Remove from the oven and serve.
