Delicious roasted vegetable recipe, served on a bed of rice, perfect to start a good meal, you can serve it as a side dish.

  • 1 eggplant
  • 2 zucchinis
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 cup rice
  • 2 cups water
  • 3 tablespoons vegetable oil
  • 1/4 cups soy
  • 100 grams alfalfa sprouts

  • Cook the rice.
  • Slice the eggplant, soak it in a pot with enough water and a little salt for 30 minutes.
  • Slice the zucchini and chop the red and yellow bell peppers.
  • Coat the vegetables in oil and grill them.
  • Serve the rice with a little soy sauce, add the vegetables on top, and place the alfalfa sprouts.
