Sautéed and Gratinated Endives

This dish can be served as a starter or to accompany meat. These gratinated endives are the best option as a side dish because they have excellent flavor and are very easy to prepare. Don’t miss out on them.

  • 2 endives, large and thick, washed and sanitized
  • 2 tomatoes, large, washed
  • 4 slices Gruyère cheese
  • 1 pinch basil
  • 1 tablespoon tarragon
  • olive oil
  • 1 tablespoon butter
  • salt and pepper

  • Heat olive oil with butter in a skillet.
  • Cut the endives in half and remove the stem as much as possible, placing them cut side down in the skillet to prevent them from falling apart.
  • Let them brown a little, season with salt and pepper to taste, add tarragon, and flip them over. When they are tender, turn off the heat, place a slice of cheese on each, and remove from the stove. Once they are gratinated, arrange them on a plate.
  • In the same dish, place the tomatoes cut into quarters or eighths depending on their size.
  • Sprinkle the tomatoes with basil, salt, and olive oil.
