500 grams medium-sized shrimp, peeled, deveined, and cut into pieces
3 eggs, slightly beaten
1 cup green onion, finely chopped
1 tablespoon fresh ginger, chopped
2 cups frozen peas

In a deep bowl, mix the soy sauce, water, vinegar, and salt.
Heat 1 tablespoon of oil in a large skillet over medium heat (a wok is better if you have one). Add the shrimp and cook for 4-5 minutes. Remove from the skillet.
Heat 2 tablespoons of oil and cook the egg for 30 seconds, add the onion and ginger, and cook for 1 more minute.
Add the soy sauce, shrimp, rice, and peas and cook for 3-4 minutes. Serve.
