On a cutting board, cut the Zwan® Classic Turkey Breast into strips approximately half a centimeter thick. Set aside until use.
In a hot pan, pour enough olive oil, place the sliced potatoes, and stir until they are coated with oil. Remember to use enough oil as the potatoes should be well covered. Cook over medium-low heat for 6 to 8 minutes, stirring constantly.
Add the onion and garlic and continue cooking for another 10 minutes over low heat, remembering to stir frequently. Remove from heat. Take the potatoes out of the oil, drain them with a spoon, and place them in a bowl. Strain the oil and set aside.
Break the eggs into a bowl, add salt and pepper, and whisk with a whisk until combined. Add the drained potatoes and mix again.
Preheat the oven to 180 °C.
Pour the mixture into a greased cast iron skillet with a bit of the reserved oil, place the strips of Zwan® Classic Turkey Breast on top, and bake for 10 minutes at 180 °C. Serve hot and garnish with parsley.
