  • 4 eggs
  • 400 grams spinach
  • 2 cloves garlic
  • 4 slices york ham, or turkey
  • 2 tablespoons cow's milk
  • 2 tablespoons queso fresco
  • 1 pinch cinnamon
  • 1 dash oil

  • Put a splash of oil in a pan and fry the finely chopped garlic and the slices of ham or turkey in cubes.
  • Add the spinach and fry.
  • Meanwhile, beat the eggs with the milk and cheese.
  • When the spinach mixture has reduced, season with cinnamon and curry.
  • Transfer the mixture to a strainer and drain the oil, which we will reserve to set the omelette.
  • When drained, add it to the eggs and mix well.
  • Set the omelette.
