4 eggs
400 grams spinach
2 cloves garlic
4 slices york ham, or turkey
2 tablespoons cow's milk
2 tablespoons queso fresco
1 pinch cinnamon
1 dash oil
Preparation

Put a splash of oil in a pan and fry the finely chopped garlic and the slices of ham or turkey in cubes.
Add the spinach and fry.
Meanwhile, beat the eggs with the milk and cheese.
When the spinach mixture has reduced, season with cinnamon and curry.
Transfer the mixture to a strainer and drain the oil, which we will reserve to set the omelette.
When drained, add it to the eggs and mix well.
Set the omelette.
