Stuffed Chiles Bandera

Vegetarian stuffed chiles that are unbattered, making them a light, colorful, and complete dish.

  • 4 Poblano chiles, roasted, peeled, and seeded
  • 100 grams refried beans
  • 100 grams ranchero cheese, or manchego cheese in slices
  • 3 tomatoes, roasted and peeled
  • 1/4 white onions
  • 4 tablespoons cream
  • 1 clove garlic

  • Preheat the oven to 180°C
  • Stuff the chiles with refried beans and a thick slice of cheese. Close them with wooden toothpicks.
  • Grease a baking dish and bake the chiles for 15 minutes.
  • In a molcajete or food processor, grind the tomatoes, onion, garlic, and season with salt and pepper. Sauté the sauce for a few minutes.
  • Remove the chiles from the oven and to serve them, drizzle with the sauce and garnish with a tablespoon of cream.
