4 Poblano chiles, roasted, peeled, and seeded
100 grams refried beans
100 grams ranchero cheese, or manchego cheese in slices
3 tomatoes, roasted and peeled
1/4 white onions
4 tablespoons cream
1 clove garlic

Preheat the oven to 180°C
Stuff the chiles with refried beans and a thick slice of cheese. Close them with wooden toothpicks.
Grease a baking dish and bake the chiles for 15 minutes.
In a molcajete or food processor, grind the tomatoes, onion, garlic, and season with salt and pepper. Sauté the sauce for a few minutes.
Remove the chiles from the oven and to serve them, drizzle with the sauce and garnish with a tablespoon of cream.
