Stuffed Potato Skins

These potato skins are perfect for a movie Sunday or to accompany any dish. Their golden texture and the combination of flavors from the yellow cheese, cream, and green onions make them a treat for your palate. Give them a try.

  • 6 potatoes, baked
  • 2 tablespoons vegetable oil
  • 1 cup yellow cheese , liquid
  • 1/4 cups bacon, golden and in pieces
  • 1/2 cups sour cream
  • 1/4 cups chives, slices

  • Preheat the oven to 180°C. Cut the potatoes in half lengthwise; scoop out the centers, leaving a shell that is 1/4 inch thick. (Save the centers for another use). Cut the shells diagonally in half.
  • Place the shells, skin side down, on a baking sheet; lightly brush the insides of the shells with oil.
  • Bake for 20 to 25 minutes or until nicely browned. Pour in the liquid yellow cheese, bits of bacon, sour cream, and slices of green onions.
