Preheat the oven to 180°C. Cut the potatoes in half lengthwise; scoop out the centers, leaving a shell that is 1/4 inch thick. (Save the centers for another use). Cut the shells diagonally in half.
Place the shells, skin side down, on a baking sheet; lightly brush the insides of the shells with oil.
Bake for 20 to 25 minutes or until nicely browned. Pour in the liquid yellow cheese, bits of bacon, sour cream, and slices of green onions.
