Boil the halved potatoes in salted water with bay leaves.
In a separate pan, cook ground meat with chorizo or longaniza and onion. Let it season for 3 minutes and add chopped tomato.
Once cooked and the potatoes blanched, remove the center and fill them with the mixture, place them in a greased baking dish, top with Chihuahua cheese, and bake in the oven for 10 to 15 minutes until the cheese melts, and it's ready.
