Stuffed Potatoes with Cod

Try these delicious stuffed potatoes with cod, a tasty option to give a twist to the traditional Christmas cod. They are delicious and perfect for reheating. Prepare them!

  • 1/4 cups olive oil
  • 2 cloves garlic
  • 1 kilo cod, soaked and shredded
  • 2 cups Del Fuerte® natural tomato purée
  • 1 cup potato, boiled and cut into small cubes
  • 1/2 cups olives
  • 1/3 cups capers
  • 1 cup bell pepper, diced
  • 2 tablespoons pasilla chile, ground
  • 1 pinch pimentón
  • 1/4 cups parsley, finely chopped
  • 4 potatoes, cooked and hollowed out

  • One day in advance, soak the cod in cold water. Change the water at least 4-5 times to remove the excessive salty flavor.
  • Place the chopped garlic in a large pot with olive oil.
  • Add the cod in pieces and fry. Set aside on a plate and shred the cod. (Note: the cod is fried raw, do not cook it in water)
  • In the oil used to fry the cod, add the tomato puree and cook for 15 minutes, stirring with a spoon.
  • Return the cod to the pot and cook for another 5 minutes.
  • Add the potatoes, olives, capers, and bell peppers.
  • Add the pasilla pepper to the cod and cook everything on low heat for 20 minutes, stirring occasionally to prevent burning.
  • Add the paprika and chopped parsley.
  • Adjust the seasoning (be careful with the salt because the cod is already quite salty).
  • Drizzle a bit of olive oil on top.
  • Preheat the oven to 180°C.
  • Spray the cooked potatoes with a little cooking spray and bake for 20 minutes to brown.
  • Stuff with the cod and serve.
