This stuffed potato recipe is the perfect side dish for any meal, as it is filled with a delicious mix of lettuce and Gruyere cheese and a creamy Parmesan dressing. Delicious!

Preheat the oven to 180°C.
Cook the potatoes in boiling salted water until tender. Drain and cool.
Slice the potatoes open and carefully scoop out the filling without reaching the bottom. Reserve the filling and the potatoes.
Melt the butter in a pan over medium heat and add the red onion and garlic. Add the Fresh Lettuce Viva Eva® and cook for a few minutes until the liquid evaporates.
Add the potato filling, almonds, and Eva® Parmesan Dressing, and mix well.
Stuff the potatoes with the lettuce filling and sprinkle with Gruyere cheese. Bake for 10 minutes or until the cheese melts.
Serve and garnish with chopped chives.
