Swiss Chard Stew with Pinto Beans and Rice

With this recipe, you will have a very complete dish due to the base of rice, beans, and vegetables. Stews are hearty and satisfying meals.

  • 1 bowl rice legumes La Asturiana®
  • 300 grams bean, pinto
  • 1 onion
  • 1 green bell pepper
  • 2 cloves garlic
  • 1 bunch chard
  • 1 glass olive oil
  • 1 teaspoon sweet paprika, and salt

  • We soak the dried beans the night before in double the volume of cold water. The next day, we drain them and place them in a pot with the soaking water.
  • We let them cook for half an hour, drain them, and change the water.
  • We place in the pot, along with the beans covered with clean, cold water, the chopped green pepper and onion in brunoise (small pieces) and finely chopped garlic cloves.
  • We let it cook until the beans are tender. We prepare the Swiss chard, remove the leaves, clean them under running water, and chop the leaves. We reserve the Swiss chard stalks to cook and batter them as a side dish for another meal.
  • We add the rice and the Swiss chard leaves to the beans and let it cook until the rice is cooked, about 20 minutes. We season with salt and a little paprika. Serve hot as a stew.
