  • 2 tablespoons vegetable oil
  • 1/2 cups onion
  • 1 clove garlic
  • 6 tomatillos
  • 2 Jalapeño chiles, without seeds or veins
  • 1/2 cups chicken broth
  • 1 cup sour cream
  • salt and pepper
  • 2 tablespoons butter
  • 1/4 cups onion
  • 2 cups chayote, in medium cubes, cooked
  • 1 cup Manchego cheese, shredded
  • white rice

  • Heat the vegetable oil in a pot and add the onion, garlic, tomatillo, and jalapeño pepper. Cook for 8 minutes, remove, and place in a blender.
  • Blend the tomatoes, onion, pepper, garlic, jalapeño, chicken broth, sour cream, salt, and pepper for 2 minutes. Set aside.
  • Melt the butter in a cast-iron skillet over medium heat, add the onion, and cook for 2 minutes. Then add the chayotes and the sauce and cook on low heat for 5 minutes.
  • Add the manchego cheese and bake at 200 °C for 5 minutes.
  • Serve the Swiss chayotes in the same skillet, garnish with cilantro leaves, and accompany with white rice.
