Tamale Frittata

  • 2 teaspoons vegetable oil
  • 3 tamales
  • 5 eggs , large
  • 2/3 cups evaporated milk
  • 1 1/2 cups Mozzarella cheese, shredded
  • green salsas, tomatillo, hot

  • Heat the oil in a large skillet over medium heat.
  • Add the pieces of tamale, frying and stirring frequently, for 5 minutes or until golden.
  • Beat the eggs and evaporated milk in a large bowl until combined.
  • Add to the skillet; cover it.
  • Cook over medium-low heat for 6 to 8 minutes or until the center is set.
  • Top with cheese; cover it.
  • Remove from heat.
  • Let sit for 2 minutes until the cheese melts.
  • Serve with sauce on top.
