Tomato Tart with Cheese

The tomato tart is delicious and looks very nice. It works well for a light dinner.

  • 1 Brisée pasta
  • 2 tablespoons Dijon mustard
  • 60 grams Gruyère cheese, grated
  • 6 tomatillos, medium
  • 250 grams Mozzarella cheese
  • 1 teaspoon fresh thyme
  • 2 tablespoons olive oil

  • Preheat the oven to 375ºF. Roll out the pie crust and place it in a greased and floured tart pan. Slice the tomato and also slice the Mozzarella cheese thinly.
  • Spread Dijon mustard on the bottom of the crust. Sprinkle grated cheese over the mustard. Layer a tomato slice, a slice of Mozzarella, a tomato, Mozzarella, etc. Arrange around the pan and finish in the center, continuing around until everything is used. Sprinkle with chopped thyme, salt, and pepper.
  • Finally, drizzle olive oil evenly over the entire tart. Bake in the center of the oven for 35 to 40 minutes, or until it starts to brown. Remove from the oven, add a few more drops of olive oil, and serve immediately.
