350 grams queso fresco, fresh cheese, ranchero, or any kind that doesn't melt
1 can tomato purée

Cut the cheese into strips and place it inside the tortilla, making sure it doesn't spill out.
Once finished, prepare the egg whites to the turrón point and heat in a skillet with as much oil as you deem necessary.
Dip the tortilla in the egg to the turrón point until well covered and drain one by one. Place them on a napkin to remove excess grease.
In a pot, place a teaspoon of oil and sauté the onion in half-moons or chopped. Once it is golden, pour in the tomato puree, add water and season to taste.
When the tomato broth starts to boil, begin to immerse the tortillas (tortillas) into the sauce, let it boil; you can serve it with rice and beans.
