Artichoke Cheese

  • 300 grams cream cheese, at room temperature
  • 150 milliliters whipping cream
  • 300 grams Parmesan cheese
  • 2 tablespoons oil
  • 2 red bell peppers, in cubes
  • 250 grams artichoke heart, in slices
  • 100 grams onion, finely chopped
  • 10 button mushrooms, sliced
  • 250 grams spinach, cut into thin strips
  • 3 sun-dried tomatoes, sliced
  • salt and pepper

  • Place in a pot over low heat, the cream and cream cheese. Once hot, incorporate the parmesan cheese.
  • Remove immediately as soon as it comes to a boil and pour into a glass baking dish. Refrigerate for approximately 10 minutes (until cool).
  • Heat the oil in a skillet and sauté the bell pepper, artichoke, onion, mushrooms, and spinach separately. Drain excess liquid and let cool.
  • Mix the sautéed vegetables and incorporate the cheese mixture. Season with salt and pepper to taste.
