Baked Zucchini Cakes

  • 4 zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cups flour
  • 1/4 cups Parmesan cheese
  • 2 cloves garlic, Finely chopped
  • 1 egg
  • salt and pepper
  • Nutrioli Spray®
  • white rice, for serving

  • Preheat the oven to 200°C.
  • Place the grated zucchini in a colander, add salt, and let it rest for 10 minutes to lose as much liquid as possible.
  • Place on absorbent paper to dry.
  • Mix the zucchini with the flour, Parmesan cheese, garlic, and egg, season with pepper.
  • Using a spoon, place on a baking sheet lined with parchment paper, forming patties, spray with Nutrioli® Spray.
  • Bake for 15 minutes or until the edges are slightly golden, remove from the oven and serve immediately.
  • Serve with white rice.
