Bell Pepper Rajas

The alternative option for the famous rajas poblanas but with bell pepper. If you don't like chili or are allergic to it, this option is for you.

  • 5 bell peppers
  • 1/4 onions
  • 1 clove garlic
  • 250 grams sour cream
  • 1/4 kilos Manchego cheese
  • 1 cup ear corn

  • Heat a comal or skillet and cook the peppers over medium heat for about 20 minutes.
  • Once cooked, place them in a bag for another 10 minutes to sweat. Wash, remove the stem and seeds with cold water. Cut into medium-sized strips.
  • Finely chop the onion and garlic. Heat oil in a skillet and add the garlic, onion, strips, and corn. Cook for 5 minutes.
  • Add the cheese and cook until it melts with the rest of the ingredients. Serve.
