Vegetable Gratin

The vegetable gratin is a different preparation for eating vegetables that is full of flavor and retains the health benefits of its ingredients.

  • 1 cauliflower
  • 1 broccoli
  • 3 scallions, cut into medium pieces
  • 1 cup Chihuahua cheese, grated
  • 1 egg
  • 2 tablespoons cornstarch
  • 1 1/2 cups cow's milk
  • 1 1/2 cups breadcrumbs
  • salt
  • pepper

  • Cut the broccoli and cauliflower into small florets. Boil them in water for 1 minute and then transfer them to a bowl with ice water.
  • Dissolve the cornstarch in the milk and beat the egg separately.
  • Heat the milk with the onions and let it cook for 5 minutes on low heat, stirring constantly.
  • Remove from heat and add the cheese, the egg, the cauliflower, the broccoli, and half of the bread. Also, add salt and pepper, and transfer everything to a baking dish.
  • Add the remaining bread and bake at 180°C for 20 minutes.
