Carrot Enchiladas

Carrot enchiladas are a delicious and super easy meal to prepare; you won't regret it!

  • 4 carrots, washed and grated
  • 1/2 onions, sliced thin
  • 1 garlic, chopped
  • salt , and pepper to taste
  • corn tortillas
  • cascabel chiles

  • In a pan, heat a little oil and add the chopped onion and garlic, stirring until the onion turns translucent.
  • Add the carrot to the onion and season with salt and pepper until the carrot softens.
  • Make a sauce with the cascabel chili and add it to a pan, heating it with a little oil.
  • Place the tortillas for a few seconds in the sauce, this is just to give the tortilla a little color.
  • Place the carrot filling inside the tortilla and roll it up like a flute.
