Carrot Tacos

Try these delicious carrot tacos; they make a very light side dish or you can enjoy them as an afternoon snack. They taste great.

olive oil
1/2 onions, finely chopped
1 clove garlic
3 carrots, grated
6 leaves lettuce
100 fresh cilantro, finely chopped
100 chipotle chiles in adobo sauce

Heat a pan with oil.
Once hot, add the onion and then the garlic. Sauté for a while.
Add the grated carrots and the rest of the ingredients.
Mix well until everything is combined.
Serve a portion in each lettuce leaf.
