Carrot Tacos

Try these delicious carrot tacos; they make a very light side dish or you can enjoy them as an afternoon snack. They taste great.

  • olive oil
  • 1/2 onions, finely chopped
  • 1 clove garlic
  • 3 carrots, grated
  • 6 leaves lettuce
  • 100 fresh cilantro, finely chopped
  • 100 chipotle chiles in adobo sauce

  • Heat a pan with oil.
  • Once hot, add the onion and then the garlic. Sauté for a while.
  • Add the grated carrots and the rest of the ingredients.
  • Mix well until everything is combined.
  • Serve a portion in each lettuce leaf.
