4 tablespoons sugar
1 teaspoon cinnamon

Peel and chop the carrots into small cubes.
In a medium-sized pot, heat the vegetable oil.
Add the carrots and sauté for 5 minutes.
Add the sugar and cinnamon, cover the pot, and cook until the carrots are tender (approx. 15 minutes).
Remove the lid and continue cooking until they are caramelized.
