Chayotes in Cream

These chayotes in cream are prepared with cold cuts and cooked in a creamy sauce that perfectly blends all the flavors. Best of all, this side dish is easy to prepare, nutritious, and very light, so give it a try!

  • 2 tablespoons butter
  • 1 cup onion, finely chopped
  • 1 cup bacon
  • 1 cup deli ham, thick, diced into small cubes
  • 3 árbol chiles, seedless, in strips
  • 4 chayotes, in cubes
  • salt
  • pepper
  • 1 cup sour cream
  • 1 cup cream cheese, in small pieces
  • 2 cups queso fresco, type panela, in cubes
  • chives, finely chopped, for garnish

  • Heat a large, semi-deep skillet over medium heat, add the butter and onion and sauté for 3 minutes. Add the bacon and ham, then sauté until golden. Incorporate the tree chili and chayote. Season with salt and pepper and cover. Reduce the heat and cook for 15 minutes.
  • When the chayote is tender, add the cream and cream cheese, mix and cook for 5 more minutes or until you achieve a semi-thick texture.
  • Add the fresh cheese and remove from heat.
  • Serve the chayotes in cream hot and garnish with a little chopped scallion.
