Heat a large, semi-deep skillet over medium heat, add the butter and onion and sauté for 3 minutes. Add the bacon and ham, then sauté until golden. Incorporate the tree chili and chayote. Season with salt and pepper and cover. Reduce the heat and cook for 15 minutes.
When the chayote is tender, add the cream and cream cheese, mix and cook for 5 more minutes or until you achieve a semi-thick texture.
Add the fresh cheese and remove from heat.
Serve the chayotes in cream hot and garnish with a little chopped scallion.
