  • 5 Poblano chiles, roasted and deveined
  • 150 grams Manchego cheese, grated
  • 150 grams cheddar cheese, grated
  • 1 cup chorizo
  • 1 cup refried beans

  • Preheat the oven to 180ºC.
  • Heat the beans together with the chorizo in a skillet.
  • Add the bean and chorizo mixture to each pepper.
  • Place the peppers in a baking dish and sprinkle with manchego cheese and cheddar cheese.
  • Place them in the oven for 10-15 minutes.
  • Serve accompanied by your favorite sauce.
