5 Poblano chiles, roasted and deveined
150 grams Manchego cheese, grated
150 grams cheddar cheese, grated
1 cup chorizo
1 cup refried beans

Preheat the oven to 180ºC.
Heat the beans together with the chorizo in a skillet.
Add the bean and chorizo mixture to each pepper.
Place the peppers in a baking dish and sprinkle with manchego cheese and cheddar cheese.
Place them in the oven for 10-15 minutes.
Serve accompanied by your favorite sauce.
