Stuffed Chiles with Meat

Stuffed chiles are a delicious recipe for a meal or dinner as a main dish.

  • 6 Poblano chiles
  • 1 cup water
  • 2 cups tomato juice
  • 1 can tomato purée, 180 grams
  • 450 grams ground beef
  • 1 tablespoon dried oregano
  • 1 pinch garlic
  • 1/4 cups carrot , minced
  • 1/4 cups onion, minced

  • Preheat the oven to 180 degrees Celsius.
  • To peel the chiles, first place them directly over the fire until their skin is completely burned (black).
  • Put them in a sealed plastic bag and let them sweat for 10 minutes. Remove them from the bag and peel them under cold water.
  • Cut the chiles lengthwise and clean out their veins and seeds.
  • In a large skillet, mix the water, tomato juice, tomato paste, and spices; bring to a boil for 15 minutes.
  • Mix the meat with the carrot and onion and add to the tomato sauce.
  • Fill the chiles with approximately 5 tablespoons of the meat mixture.
  • Place them in a baking dish and cover them with the remaining tomato sauce. Bake for 50 minutes.
